Have you ever noticed that some cuts of pork contain a section of both white and red meat? Well the red areas of the meat are darker in colour, due an increased amount of ‘myoglobin’ in the animals muscles. It’s these parts of the meat that also contain much higher pH Levels and it’s the "Higher pH Meats (which are less acidic and more alkaline) that are known for being extra tender, juicy and flavoursome.
